Shrimp with Fennel

Description

it doesn't seem like anise and shrimp should mix... but they do and its fantastic

Ingredients

7 oz
orzo pasta
4 oz
fennel (diced)
4 oz
onion (diced)
  ds
red pepper flakes
2 clv
garlic (crushed)
1⁄4 c
dry white wine
6 oz
grape tomatoes (halved)
1⁄2 t
oregano
1 T
Ouzo
3⁄4 lb
shrimp (peeled and de-vained)
2 oz
feta
1 T
fresh parsley (finely chopped)
1 T
lemon zest
 
salt and pepper (to taste)

Instructions

Cook the orzo according to the directions on its package.

Heat a little olive oil in a skillet. Add the onions, and saute 2 minutes. Add the fennel, red pepper flakes, and salt, and saute another 6 minutes. Add garlic and saute another 2 minutes.

Add wine and bring to a simmer. Simmer 3 minutes, or until liquid is reduced by half.

Add tomatoes, oregano, an Ouzo. Simmer another 3 minutes.

Turn the heat to medium-high, add the shrimp, and fry until pink. Remove from heat, add the lemon zest and parsley and toss to combine.

Sprinkle with feta, and serve with orzo.

Notes

Ouzo is a Greek anise flavored liquor, any anise liquor will do, we found Ouzo to be the cheapest.
